OS Nutritional Science
Nutritional science is a complex subject. Maybe this is the reason that many athletes do not have detailed nutritional plans as a part of their overall training and racing regimen. At OS Performance Nutrition we recognize the complexity of nutritional science and want to help athletes “bridge the knowledge gap” and understand how easy it is to manage optimal nutritional performance.
There are many different areas of nutritional science that we can explore; however, you probably do not have the time to become a PhD in nutritional science. That is OK. We will do the legwork for you. Through this website we will provide commentary from noted nutritional scientists, debate nutritional science subjects, reveal test methods and performance results.
As a primer for enthusiasts that want to learn the basics about nutrition, we have created a document that covers basic principles of nutritional science in reasonable detail. This document can be downloaded and printed at your leisure, so that you can learn about basic concepts and begin to build your own personal nutritional training regimen. This will pay big dividends in athletic performance.

We also have created a presentation that presents the key factors of nutritional science in a straight forward presentation called “Performance Nutrition The Basics.”

CONCENTRATION IS KING!
Main Entry: os·mo·lal·i·ty
Pronunciation: "äz-mO-'lal-&t-E, "äs-
Function: noun
Inflected Form: plural -ties
: the concentration of an osmotic solution especially when measured in osmols or milliosmols per 1000 grams of solvent —os·mo·lal /äz-'mO-l&l, äs-/ adjective
| Merriam-Webster's Medical Dictionary, © 2002 Merriam-Webster, Inc. |
OSmolality is an important measure of a nutritional supplement's concentration in water and its ability to be absorbed
by the body. Optimal absorption of calories occurs in a tight osmotic band of 290 to 310 mOsm/kg. The ingredients used in a nutritional supplement need to be designed precisely to help you achieve an osmotic solution in water and allow you to absorb calories
quickly. If your nutritional supplement is over-concentrated it will sit in your stomach until enough water is pulled from the resources of your body to allow for osmotic absorption of those calories. This can cause severe dehydration over time. Under-concentrated nutritional supplements simply are less than optimal for absorbing calories. Since your body's caloric burn rate is greater than your body's ability to absorb calories you do not want to under-concentrate your nutritional supplement.
CONCENTRATION OF YOUR NUTRITIONAL SUPPLEMENT IS CRITICAL! THINK OS for OSMOLALITY!
How is energy Stored in your muscles?
gly·co·gen (glī'kə-jən)
n.
A polysaccharide, (C6H10O5)n, that is the main form of carbohydrate storage in animals and occurs primarily in the muscle tissue. It is readily converted to glucose as needed by the body to satisfy its energy needs.
Merriam-Webster's Medical Dictionary, © 2002 Merriam-Webster, Inc.
So you are an animal and animals like you depend on glycogen for energy. Consider your muscles as numerous fuel tanks and it is your job to keep the fuel tanks filled so that you can do athletic things for hours at a time. Also consider that all carbs, simple and complex, get converted into glycogen at different rates.
Simple sugars reach osmotic concentrations at 6% to 7% in a solution of 16 oz. of water or 110 to 140 calories.
Complex carbs reach osmotic concentrations at 20% to 23% in a solution of 16 oz. of water or 285 to 305 calories.
The math for optimal nutritional performance is simple. Athletes can digest significantly more calories when consuming an osmotic designed, precise concentration of fast absorbing complex carbs. Over 100 calories more per hour of high quality calories leads to a significant energy advantage for athletes
